RECIPES FOR EXPEDITION KAYAKING (Portions for one person)

There has been many discussions about food to be taken on extended camping trips.  Many of the 'new chums' are often looking for advice about weight, packaging and nutrition.

Rob T. and Rob M. have kindly offered some basic ingredients to stimulate some discussion among those who are interested.  What you do with them is up to you! These will provide a starting point for your culinary experiments and experiences.  Have fun!

HAM STIR FRY

Ingredients                                                                    Quantities

Small tin Ham
Small tin Peaches
Onion                                                                           _ chopped onion
Celery                                                                          _ chopped stick
Dried mushrooms                                                         6 pieces
Dried Peas                                                                   4 table spoons
Carrot                                                                          _ chopped carrot
Sweet Chilli Sauce                                                        to taste
Precooked noodles Ð Rice Ð or Cous cous                    _ cup or _ packet
Olive oil                                                                        2 table spoons

CUMBERLAND SAUCE with ham or bacon

Ingredients                                                                    Quantities
Shredded orange peel                                                   1 orange
Orange Juice                                                                1 orange
Lemon  Juice                                                                 2 tablespoons
Red wine                                                                      _ cup
Redcurrent Jelly                                                            4 tablspoons
Cornflour                                                                      To thicken if requiredÐ1 tablespoon?

TUNA SAUCE

Ingredients                                                                    Quantities
Smoked Tuna in oil                                                       1 small tin
Onion                                                                           _ chopped
Garlic                                                                           1 clove chopped
Ginger                                                                         1/2 teaspoon powdered
Mushrooms                                                                  6 from packet of dried
Carrot                                                                          _ chopped (for texture)
Celery                                                                          _ a stem chopped (for texture)
Soy sauce                                                                     _ teaspoon
Noodles                                                                       _ packet of precooked

ÔMINCEÕ SAUCE

Ingredients                                                                    Quantities
Braised Steak & Onion (lacks texture)                          1 small tin
Onion                                                                           _ chopped
Garlic                                                                           1 clove chopped
Pasta sauce                                                                  _ small jar
Carrot                                                                          _ chopped
Sweet Corn                                                                  4 table spoons
Olive oil                                                                        2 table spoons
Cous cous                                                                    1/3 cup
Add nuts for texture.

SMOKED MUSSELS

Ingredients                                                                    Quantities
Smoked mussels                                                           1 small tin
Onion                                                                           _ chopped
Garlic                                                                           1 clove chopped
Mushrooms                                                                  6 from packet of dried
Tomato Sauce                                                              2 table spoons
Cous cous                                                                    1/3 cup

CHICKEN IN LEMON SAUCE

Ingredients                                                                    Quantities

Chicken fillets 3                                                            3 fillets cut in strips
Onion                                                                           _ chopped
Garlic                                                                           1 clove chopped
Ginger                                                                          1 teaspoon powdered
Soy sauce                                                                     1 teaspoon?
Lemon juice                                                                  _ lemon
Mushrooms                                                                  6 strips of dried
Olive oil                                                                        2 tablespoons
Noodles                                                                       _ packet precooked

LAKSA

Laksa paste                                                                  2 tablespoons
Olive oil                                                                        1 tablespoon
Tuna/Crab meat                                                            1 small tin
Coconut milk                                                                1 cup
Onion (small)                                                                _ chopped
Dried Shitake mushrooms                                             1/3 cup
Dried beans                                                                  1/3 cup
Vermicelli rice (1 cup water)                                         50g

PASTA

Pizza sauce                                                                   1 sachet (50g)
Olive oil                                                                        1 tablespoon
Onion (small)                                                                _ chopped
Red capsicum (small)                                                    _ chopped
Dried Shitake mushrooms                                             1/3 cup
Dried beans                                                                  1/3 cup
Pasta (1 cup water)                                                      _ cup
Pine nuts & Parmesan cheese                                        to taste
